About Cocoa Powder Alkalised
The addition of an alkaline substance such as potassium carbonate enhances the flavour and properties of natural cocoa powder. This alkalised cocoa powder is darker brown than cocoa powder, with reddish undertones; it is milder in flavour and mixes more easily with liquids. However, it does not react as well with baking soda.
